les pauls are heavier and sustain longer for this reason, also the way the neck is glued into the body rather than bolted on, and probably a few other reasons.
te other main difference is that les pauls have humbucker pickups which can be used for heavier rock (a generalisation).
thats not to say les pauls are better or worse..just different.
i prefer strats because of their sound (which is hard to describe )and I finbd the necks much easier to play and the weight of it helps too.
fat strats i suppose are somewhere between the two guitars, having both single coil and humbucker pickups...making it very versatile (though, I like the sound of single coils).
with a good guitar of any of these types, a very wide range of sounds can be found..and they can all be vrey versatile guitars.
personally...i go for a good make guitar...and then check how it feels before plugging it in. pickups can be changed later if needed.
